SIROCCO’S CHEF GONZALO RUIZ HAS A PLEASANTLY REFRESHING TAKE ON MEDITERRANEAN CUISINE
Sirocco, the world’s highest alfresco restaurant, invites connoisseurs of gastronomy to experience its Mediterranean cuisine on the 63rd floor of The Dome at Tower Club at lebua, one of Bangkok’s most iconic dining locations.
The Sirocco experience begins with a walk down the artistically lit stone staircase, and the soothing strains of the jazz band resonating through the warm breeze. Just in front of the restaurant is the famed Sky Bar, where the Hangovertini cocktail was created for the cast and crew of The Hangover Part II when they were filming there.
However, the star of Sirocco is Chef Gonzalo Ruiz, a culinary master with Mediterranean roots. For the past decade, Chef Gonzalo has been introducing appreciative diners to his signature European gastronomy at various luxury restaurants everywhere from Ibiza to India.
“Sirocco is a landmark, and my job is to make sure that we continue to give our guests great food and a great experience," says the Chef de Cuisine in confidence.
Chef Gonzola has created many signature dishes at Sirocco such as the Alaskan Crab Tartare with avocado, white mushroom, and a basil & lime sorbet, and the 12-hour Slow-Roasted Pork with crispy skin, served with poached apple purée, sweet potato and natural jus. But with summer here, he has just launched a new tasting menu to celebrate the season. Notable summer dishes include the Challans Foie Gras, pan-seared and served with Marcona almond, cherry morello, and duck jus, and Wagyu Beef Tenderloin in a Barolo sauce and accompanied by potato fondant, morel mushrooms and parsley coulis among others.
