Here, in their open kitchen, chefs Thomas and Mathias Suhring bring their years at the Michelin-starred restaurants of Europe to bear on the evening’s masterpiece. Guests are offered a choice of two dining formats – the exquisite Four-Course Tasting Menu and the celebrated Seven-Course Tasting Menu with optional wine pairings
The chefs’ rendition of European cuisine subtly infused with Asian flavors calls for the finest of seasonal ingredients from international growers as well as local producers – often from royally initiated projects and always with an emphasis on organic farming methods. Smoking, pickling, drying, curing and grilling are done on-site with homemade herbal oils, vinegars, bouillons, and fruit and vegetable extracts.
The Tasting Menu, which changes daily, offers such innovative delicacies as rainbow trout cooked on cedar wood; Nova Scotia lobster poached in anis butter; Burgaud duck roasted on the bone; and seared Diamondin lamb. Every course is elegantly presented by gracious servers and deftly described by our maitre d'.
