Devotees of fine Mediterranean dining were delighted when Gabriele Castellanza flew in from Milan to take over the kitchen at Sirocco, one of the most talked about restaurants in Bangkok. Having worked alongside some of the world’s most eminent chefs at a string of Michelin-starred restaurants, Chef Gabriele worked for Heston & Gordon Ramsays Group and has also cooked for Queen Elizabeth, among others celebrities.
While he intends to maintain the Sirocco tradition of scouring the fresh markets and specialty producers of the world for the pick of the seasonal harvests, the chef is enjoying the many discoveries just waiting to be found right here in Bangkok, which he says is “full of exotic flavors and ingredients that, for me, are new and challenging”.
His plans for the multiple-award-winning Sirocco at The Dome, lebua’s signature Food & Beverage complex, are lofty: “Our goal is to raise the bar and elevate the idea of Mediterranean cuisine to the next level. The menu at Sirocco, and all of The Dome restaurants, will include the healthy and sustainable lifestyle culinary options that have become such an important part of European gastronomy”.
“From hors-d’oeuvre to desserts” is how Chef Gabriele describes his culinary career in his native country, where he was schooled in “the old Italian culinary traditions”. Guests will be pleased to learn that he is also a very talented pâtissier, so their desserts should be even more exceptional than usual. And with his extensive banqueting and catering experience, “specialized in private events and ceremonies,” meetings in The State Room and galas in The Pundarika Ballroom will never be the same again.
