Mezzaluna’s Chef Ryuki Kawasaki added another feather to his hat when he recently competed in the Iron Chef Thailand television show.
With salmon as the secret ingredient, he went up against strong contender Chef Pongtawat “Ian Kittichai” Chalermkittichai’, who is also one of the permanent Iron Chefs on the show. Ryuki wowed the judges with five spectacular dishes including “Salmon tartar with green apple, shiso and Ossetra caviar”; “Salmon mousseline stuffed zucchini blossoms, summer truffles and morel consommé”; and “Soy-glazed salmon, foie gras custard with duck dashi”, to eventually win the battle.
