Perched high above Bangkok on the 52nd floor of lebua, redefines the Chinese dining experience. Celebrated as the “new face of Chinese dining,” Breeze is a testament to culinary mastery, innovative presentation, and impeccable service. The restaurant presents a sumptuous menu that honors authentic Chinese heritage while pushing the boundaries of contemporary culinary artistry.
Chef Sam Pang’s tasting menu reads as a tour of the Cantonese kitchen, interleaved with sourcing from Hokkaido and the chef’s own Malaysian-Cantonese inheritance. Dim sum precedes; the rest unfolds slowly, under the stars.
The Chef
Chef Sam Pang’s passion for cooking began in the markets of his childhood, he pursued his passion from a young age, starting at the very bottom of the kitchen and building a strong foundation through dedication, discipline, and respect for authentic Chinese cuisine.
Over the past 36 years, Chef Sam has built an international career with Pan Pacific, Raffles Singapore, Star Cruises, InterContinental Qingdao, and Hakkasan. He led culinary operations during the Olympic and Paralympic Games in Qingdao before overseeing three Hakkasan pre-opening projects across the Middle East. These experiences refined his culinary style while earning industry recognition, including Best Chinese Restaurant awards from What’s On, Time Out, and BBC Good Food.

Every dish is crafted to preserve the authentic flavors and comforting traditions of Chinese cuisine while delivering a memorable dining experience.
The Chef
Born in Guangzhou, Southern China, Chef He Shui Zhen discovered her passion for cooking at an early age while preparing meals for her family. Inspired by the rich dim sum traditions of her hometown, she began her professional career young, developing the precision, speed, and craftsmanship that have become the hallmarks of her work. Over the years, she mastered both Southern and Northern Chinese dim sum traditions, giving her a rare depth of expertise.
Throughout her 30-year career, Chef Shui Zhen has worked at renowned five-star hotels, including Hyatt Beijing and Guangzhou Oriental Hotel, before joining the opening team at Hakkasan in Dubai. She established the restaurant’s dim sum program from the ground up, creating menus, training the team, and maintaining the brand’s exacting standards. She later led another successful opening as Head Dim Sum Chef at Hakkasan, The St. Regis Doha, where she oversaw the dim sum kitchen and mentored a new culinary team.
With more than three decades of experience across Mainland China, Southeast Asia, and the Middle East, Chef Shui Zhen brings exceptional skill, authenticity, and dedication to every dish she creates.

DRESS CODE
To ensure a pleasant and elegant atmosphere for all guests, we kindly ask everyone to adhere to our dress code.
Smart casual dress code for restaurants and bars
- For Women:Elegant tops, blouses, dresses, skirts, tailored shorts, and dress sandals are appropriate.
- For Men:Collared shirts (polo or button-down), t-shirts, tailored shorts, loafers, or elegant sandals are welcome.
Not permitted: Athletic wear, swimwear, sleeveless shirts (for men), flip-flops, and beach slippers.
Smart elegant attire for Chef’s Table, Mezzaluna and Pink Bar
- For Women: Elegant tops, blouses, dresses, skirts, tailored shorts, and dress sandals are appropriate.
- For Men: Collared shirts and long trousers are required. T-shirts, sleeveless clothing, shorts, and caps are not permitted. Long jeans are acceptable when paired with covered shoes.
Dress codes and policies apply to all guests, including children.
CHILD POLICY
- Children of all ages are welcome at Sirocco and Breeze.
- At Mezzaluna, Chef’s Table, Sky Bar, and The Flute Bar, children aged 7 and above are welcome when accompanied by an adult.
- Distil Bar, Alfresco 64, lebua No.3, and Pink Bar are for adults only (20+).
PHOTOGRAPHY
We encourage you to capture memorable moments during your visit. Photography is allowed in most areas of our establishments, except where signage indicates otherwise. Please note that tripods, extension poles, and external flash units are not permitted.
LUGGAGE
To ensure a comfortable and seamless experience for all guests, we kindly ask that backpacks, shopping bags, suitcases, and other large luggage items not be brought into our venues. Please be advised that luggage storage is not available at this time.
CANCELLATION & AMENDMENT POLICY
A deposit is required to guarantee your reservation and will be deducted from your final bill at the restaurant. Please note that your booking is not confirmed until the deposit has been received.
Reservations may be amended or canceled up to 72 hours prior to the reservation time without any charge. Cancellations, no-shows, or changes made less than 72 hours in advance will result in the deposit being retained as a cancellation fee without prior notice.
For special event dates (such as New Year’s Eve, Christmas Eve, and Valentine’s Day) and group reservations, a 100% non-refundable deposit is required in advance. This deposit is non-refundable, non-transferable, and cannot be applied to other reservations, events, or functions in case of cancellation or no-show.
